Spicy Chicken Sandwiches w/ Cilantro Lime Mayo

I have been making this for a while now and its soooo delish!  I served it on ciabatta but you can serve it on a hamburger bun or any other bread you want really.  Best part of this is that you can throw it together pretty fast - but be aware - the chicken does need to marinate for at least a couple hours, so be sure to leave time for that!  On another side note,  this calls for a bit of mayo...I like to use canola oil mayo because it is about 1/2 the fat and calories of regular mayo and tastes the same - so if you're looking for a way to save some calories, this is a great way!

Spicy Chicken Sandwiches w/ Cilantro Lime Mayo
makes 2 sandwiches
1 lrg. chicken breast, cut in half (down the center, lengthwise) and pounded thin
1 egg
2-3 Tbs hot sauce (depending on you spice preference)
1/2 Tbs chopped fresh oregano
1/4 c. mayo
2 Tbs cilantro
1 lrg garlic clove, finely minced
1/2 tbs lime juice
2/3 c. finely crumbled tortilla chips (food processor is the best way to do this)
1/4 c. flour
1 Tbs canola oil
salt and pepper
2 ciabatta rolls (or other bread of your choice)

Beat the egg with with hot sauce and oregano.  Place in a plastic bag and toss in the chicken to coat.  Let marinate anywhere from 2-12 hrs. 

Make the cilantro mayo - in a small bowl mix the mayo, cilantro, garlic and lime juice.  This can be made ahead as well and actually does better if its had at least about an hour to sit and let the flavors meld together.

When ready to make the rest of the meal, heat the canola oil in a medium sized skillet over medium heat.  Mix the flour with the tortilla chips and season to taste with salt and pepper.  Toss the chicken in the breadcrumb mixture to coat.  Place in the heated skillet and cook until cooked through, about 5-7 mins on each side.  Toast the buns. 

To assemble: spead a little mayo on each side of the bun, place the chicken on the bottom, garnish with lettuce, tomato, and grilled red onion.  Enjoy!
