Spinach Salad w/ Strawberry Champagne Vinaigrette

So, we've been on this on-again off-again health kick for pretty much forever now.   I never can last long because Lord knows I can't go without my butter, processed cheese and taco bell - but when we're feeling like getting back on health-train, I've gotten pretty good at coming up with healthy salad options.  This is one of my fav's for sure.  Not only is it healthy and tasty, but soooo fast and easy!  I love it when that happens!  Try it out, you won't be disappointed!

Spinach Salad w/ Strawberry Champagne Vinaigrette
Makes 2 main course or 4 first course servings
4 cups spinach or arugula (2-3 oz)
4-5 strawberries, depending on size
1 and 1/2 Tbs champagne vinegar
1/2 Tbs sugar
1 and 1/2 oz crumbled goat cheese
1/2 c. toasted walnuts
1/4 c. dried cranberries
1/2 cameo or gala apple, thinly sliced
3 Tbs apple cider vinegar
1/8 tsp. cinnamon
lemon juice

In a shallow bowl/plate, toss the apple slices with the apple cider vinegar, cinnamon and a dash or two of lemon juice.  Let stand for at least 15 mins.  In a blender, blend the strawberries with the champagne vinegar and sugar and blend until smooth (about 10 seconds).  Divide the spinach among your serving plates.  Top with apple slices, walnuts, goat cheese, cranberries and then drizzle with the strawberry champagne vinaigrette.  (looks delicious, right!?!?)
