Grilled Garlic Bread

Garlic bread needs little to know explanation....because, seriously, who doesn't love it!?  Being that it is summer, I set out to create a delicious garlic bread grilled, and with a slight twist (a garlic parsley butter!).  I probably had 5 slices, it was THAT good.  It is a super easy side that would accompany any Italian or fresh summer dish well.  If you don't have access to a grill or want to make this in the summer without going outside, cook instead in the oven under the broiler.  Place a rack about 6 inches below the top element and broil for 1-2 mins per side (keep an eye on it, it will brown fast).  I hope you enjoy it!

Grilled Garlic Bread
makes about 8 slices
1 demi baguette, sliced on the diagonal into 1/2-3/4 in. slices
1/4 c. butter or olive oil
3-4 garlic cloves (depending on size), finely minced
2 Tbs. (packed) italian parsley, finely chopped
additional 1-2 Tbs melted butter or olive oil for brushing
pinch of salt and red pepper flakes


Preheat grill to med-high heat (see above if you do not have a grill).  After slicing the bread, using a pastry brush, brush both sides with the additonal melted butter or olive oil.  Once heated, place on grill and cook about 2-3 mins per side (until preferred done-ness).  Meanwhile, heat remaining butter or olive oil in a small skillet over medium heat.  Add garlic, salt and red pepper, stirring frequently and cook until garlic starts to brown and becomes very fragrant.  Remove from heat and while still warm, stir in the parsley.  Spoon over toasted garlic bread and serve immediately.
