Mini Blackberry Napoleons (aka Blackberry Dream)

Last week for my birthday, we decided to have a few friends over for some dessert and decided to make a few different mini desserts.  I bought ingredients for a few desserts, but last minute decided that I wanted one more, so I scoured my fridge and freezer and used ingredients I already had to come up with this delicious creation!  It featured blackberries I had picked that morning and ended up being the smash hit dessert at the party! 
Mini Blackberry Napoleons
makes approx. 20 mini dessert bites
1 sheet puff pastry, thawed
6 oz. cream cheese
1/2 c. heavy whipping cream
1/3 c. powdered sugar
1/2 tsp.almond extract
blackberries (about 1 and 1/2 c.)
sugar (about 1-2 Tbs)
creme de cassis (about 2 Tbs)
zest from 1 naval orange

In a medium bowl, toss together blackberries, 1 Tbs sugar and creme de cassis.  Taste.  If berries are still tart, add 1/2-1 more Tbs sugar.  Let stand.

Preheat oven to 400 degrees.  Unfold puff pastry sheet.  Using a 2'' round cookie cutter, cut out pastry rounds.  Be sure when cutting to do each one as close as possible to the other so that you can get as much as possible out of the pastry sheet.  Place rounds on baking sheet and bake 10-12 minutes until lightly golden and puffed up.  Let cool.  Cut in half across center, horizontally.

In a small mixing bowl using an electric hand mixer, whip together the cream cheese, heavy cream, powedered sugar and almond extract.  Place in a sandwhich bag and cut of the tip (at about 1/2 an inch) for piping.

Separate the pastry halfs.  On the bottom half, pipe a little cream cheese mixture, then place the top half of the pastry on it.  Pipe some more cream cheese on top.  Repeat with all individual pastries.  Once complete, top each with 3 blackberries and a small dallop of orange zest in the center.  Best eaten immediately, but refrigerate until served, if necessary.  Enjoy!!!
