Gold Tequila Fajitas

Mexican food is my favorite...always has been, always will be.  One dumb thing about me however is that I'm allergic to bell peppers, which is super lame because they are in a lot of delish mexican dishes.  PTL that I can still at least have other peppers!!!  One dish that I always wanted and could never have was fajitas because their 3 main ingredients are meat, onions and bell peppers.  Awesome.  So, since I can't live without trying all the mexican dishes that exist, the obvious solution was making my own delicious version using alternative and additional ingredients.

Gold Tequila Fajitas
makes 2-4 servings
1 thin cut flank steak (1-1 and 1/4 lbs)
1/2 lrg. naval orange, juiced
2 oz. gold tequila
6 garlic cloves, divided
3 Tbs olive oil, divided
1 Tbs butter
1 white onion, sliced
3/4 lb. lrg. white mushrooms, sliced
2 green jalapenos, thinly sliced
2 red jalapenos, thinly sliced
kosher Salt
black Pepper

Mix the orange juice, tequila and olive oil together.  Place in a large freezer bag.  Add 4 garlic cloves, crushed.  Add the flank steak.  Marinate over night, turning once. 

Melt 2 Tbs olive oil and 1 Tbs in a large skillet over medium high heat.  Add the onions and mushrooms.  Add 3-4 Tbs (about half) of the meat marinade mixture.  Saute 5 mins.  Add the jalapenos.  Mince the remaining 2 garlic cloves and add.  Reduce the heat to medium.  Saute until the mushrooms have released their juice, the liquid has cooked in and the veggies start to brown, about another 10-15 minutes.

Meanwhile.  Season the steak with kosher salt and pepper.  Heat a medium sized skillet to medium-high heat.  Add the steak and cook to your preferred likeness.  I like to cook mine to medium well, about 4 minutes on each side.  Let rest 5 minutes before slicing.  Serve atop the onion and pepper mixutre and serve along side warm tortillas, refried beans, and optional garnishes of salsa, sour cream, cheese, cilantro, and avocado/guacamole.  Yummmm!  Need something delicious to serve the fajitas with!?  Try these mango margaritas!

  1. looks delicious! As Ben and I are eating a high protein diet with veggies--I think I could seriously eat half of this or more. Too bad about those peppers:(

  2. Thanks Kamille! Yeah, the allergy is a major bummer...for example I couldn't partake in that delicious looking quiche you made for Tina's shower and was sad about the whole time.
