Artichoke Tuna Melt

A couple months ago, I won a gift basket from the Old World Deli, a local artisan foods shop.  In it, was a can of Italian imported tuna packed in oil.  Being a foodie and all, I eat most anything - but I have never for some reason been a tuna fan.  Not.At.All.  But I am also one to not waste good food, so I figured I'd give it a shot.  Not gonna lie, this almost converted me.  Definitely recommend splurging for the tuna packed in oil if you can find it - it certainly has a more moist and less "fishy" flavor.  But if you can't, I'm sure regular tuna would work just fine.  If you are looking for a good side - I served this with my roasted potatoes and asparagus.  Fast easy and a great combo!

Artichoke Tuna Melt
Serves 2
1- 5.5 oz. can tuna packed in oil, drained
4 oz. marinated artichoke hearts, chopped
2 Tbs mayonnaise (preferrably canola mayo)
1/2 tsp. lemon zest
1 tsp. fresh lemon juice
1/4 tsp. salt
1/4 tsp. red pepper flakes
4 slices tomato
2 deli slices swiss cheese (I prefer Alpine Lace Swiss)
1 small baguette loaf

Preheat oven to broil.  In a medium bowl, stir together tuna, artichokes, mayo, lemon zest and juice, salt and red pepper flakes until evenly combined.  Cut baguette in half, horizontally and open up.  Top each side with half of the tuna mixture.  Top with slices of tomato, then swiss cheese.  Place under the broiler and broil until cheese is melted and starting to brown, about 1-2 minutes.  Serve warm and enjoy!

  1. OMG that looks delicious!!! I am so not talented in the kitchen... I can follow a recipe but I'm never good about making myself put in the effort... this seems worth it though lol. :o)
