Roasted Asparagus

Asparagus has always been one of my favorite things and this is officially my new favorite way to eat it!  So delicious, so easy and quite healthy too!  I made this with my roasted red potatoes and they shared a cookie sheet perfectly - which is a great way to get 2 easy sides in one swift move!  Try it out!

Roasted Asparagus
makes 2-4 side portions
1 bunch asparagus (medium sized)
olive oil
course sea salt
crushed red pepper

Prehear oven to 400 degrees.  Break off the end of the asparagus at the tender portion (about 1/3 up from the bottom).  On a cookie sheet, lie the aspargus out evenly.  Drizzle lightly with olive oil (about a tablespoon).  Season to taste with salt and red pepper flakes.  Bake for 15 mins.  Remove and toss, turning over.  Place back in the oven and bake for another 15-20 minutes.  Asparagus should be slightly wilted, darkened in spots, but not too crunchy.  Serve immediately and enjoy!
