Roasted Red Potatoes

Classic delicious side.  Roasted potatoes.  Can go with almost anything. 

You can also make these with my roasted asparagus, sharing a pan - you'll have 2 easy sides with little work in a short amount of time, using 1 dish.

Roasted Red Potatoes
makes 2-4 side portions
1/3 lb. baby red potatoes, washed and quartered
1 Tbs. butter, melted
1/2 tsp. kosher salt
1/2 tsp. freshly ground pepper
1/4 tsp. garlic powder
1/8 tsp. cayenne powder

Preheat oven to 400 degrees.  In a medium bowl, toss thw baby potatoes with the melted butter - then add all the spices and toss until potatoes are evenly coated.  Place on a cookie sheet.  Bake 15 minutes.  Remove, and stir/turning over.  Bake another 15-20 mins, until golden brown around edges.  Serve warm.
